BRAISING LIQUID. 1 pound of pork butt (or shoulder.) 1/4 cup of soy sauce. 1/4 cup brown sugar. 2 tablespoon sesame oil. 1 teaspoon chili-garlic paste. 6 cloves of garlic, thinly sliced. 0.5 inch nub of ginger, thinly sliced. Scallions, for garnish. Note: Don't season the meat with salt as it sears as it'll get overly salty in combination with the soy sauce.
