Snack. B.L.T. We had Applegate’s hardwood-smoked, “Sunday Bacon” on Arnold’s Flax and Fiber-flavored “Sandwich Thins.” Dinner. Brussels sprout fried rice.

It’s the Fourth of July, a searingly hot day that turned mildly stormy around the time that fireworks lit up the New York sky. Sadly, our deck doesn’t offer a grand vista of the East River. But we celebrated by eating well. Lunch. I made a cool dip with cottage cheese and radish. I put my own spin on it by throwing in a few stalks of finely sliced scallions. We spread a heap on toasted sourdough and that was delicious. Dinner.  Pasta, tossed with a flavorful mix of with sun-dried tomatoes, garlic, red chili flakes, kalamata olives, feta and parsley.

Monday, July 2, 2018.

Dinner. Preparing dinner wasn’t easy, for I made something I hadn’t attempted before. There was a fillet of tilapia, a leftover from an earlier meal. Baking it would have been easy, but that method wouldn’t render it quite so tasty. So, I took another avenue to infuse some zing into the lackluster piece. I minced it up and made it into small balls and fried them. I served them on a bed of lettuce with a sweet soy-garlic dipping sauce.   Fruit of the Day.  Black plums.
