PREPARING THE GOCHUJANG PASTE. 3 tablespoons gochujang. 2 tablespoons dark brown sugar. 2 tablespoons mirin. 1 tablespoon soy sauce. 2 teaspoons freshly minced garlic. 1/2 teaspoon freshly minced ginger. Oh my, what can I say? We had a fat fest, what with unctuous slabs of fat alternating with pure meat in the pork belly. If not all—but some—of that fatty goodness was mitigated by the sweet-and-sour tang of pickled daikon radish.
